From Chardonnay, planted in 1969, on a clay-limestone terroir exposed East. Thanks to a microclimate that we have observed almost each year, the botrytis (noble rot) regularly sets in which provides a high concentration of sugar. We start the first sorting at the beginning of October, the second one at the end of the month and the third one in November. With a good acidity that props up the sugar well, a certain sluggishness is avoided; the balance is perfect, to encounter a genuine soft wine. A wine best savored with foie gras, cheese or a chocolate dessert.
